After having just made this cake (although I know you are asking Deb) I do NOT think it would work as a yule log. Since coconut oil is solid at room temperature (unless of course youre in NJ in october), it will make a hard shell for the glaze. I have done that before too. How though, did this make it to day four in your fridge?! I had a little trouble making the glaze thin enough to drizzle, any suggestions?

For years I have made a vegan chocolate cake in a bundt pan and it is my kids favorite. It tastes great and no one will know its upside down but Id definitely reduce the baking soda next time. The cake turned out of the pan to the cooling rack, and from the cooling rack to the plate quite easily. I did use light corn syrup, that is clear.

I was looking for a recipe that would make life a bit better and found this. (I also took another posters advice and added minced crystallized ginger YUM). Because of the above issue, I was worried I ended up overmixing. :) I meant to say that this cake doesnt rise very much is why.

I love that you upped the choc factor here. I used a packet of Starbucks instant coffee and added the 1 1/2 cups of water to it. I strongly recommend making it as is and using coffee instead of water!

Plus, Im glad its less sweet because the icingwhich hardened and now reminds me of hardshell ice cream toppingadds a nice amount of sweetness. I reduced the water to 1 cup and the baking soda to 1 tsp, as others suggested, and baked it a few minutes more than the 35 minutes listed in the recipe. Cant wait to glaze it and dig in later tonight for an impromptu birthday celebration. I make it with a broiled brown sugar, butter, coconut and nuts topping, and its like a super moist German chocolate cake.

Had the depression also but when topped with the glaze you cannot tell. I popped it in the microwave at work but dont have one at home I love the gooeyness of the glaze a day one. I did a partial melt on the chips before adding the oil, but the chips were slow to melt ( * i should say that all of my appliances are brand new {approx 5 weeks} and I am still in learning curve mode with the newness of them,) so i added the remainder of the ingredients and checked the result every 30 seconds or so. Its going to be my go-to chocolate cake recipe for my sone.

Its so fast and I always have the ingredients on hand. Ill be trying this recipe again, but a little different next time. Which based on research can be from to high of a temp. Thats happens here whenever my husband makes a cake [particularly if its a boxed cake] because he stirs and stirs and stirs.

The cake is GREAT moist and rich and such a beautiful dark color and it absolutely scratched the chocolate itch. Turns out perfectly every time. This cake is delicious; its hard to believe that its vegan/pareve. Add chopped hazelnuts on top of the glaze and whipped cream with orange zest if you really need to pretend its not Tuesday. I dont need it until tomorrow so Ill probably let it dry upside down overnight, then frost it upside down and put berries in the center indentation.

I double-checked all the ingredient amounts, pan size, and oven temp and cant figure out what went wrong. chips to melt after multiple 20-second bursts in the microwave, and then suddenly I could tell it was about to seize, so I slathered it on top of the cake just in time.

If desired, sprinkle sparkling sugar over the chocolate. I personally would hesitate to pour it over a out-turned cake, because the warm glaze is runny and copious.

Also used 1/4 cups special dark cocoa from Hershey and the rest, Natural Cocoa from Trader Joes. 10/10 would make again. Turned out beautifully! Microwave (or use double boiler) gently, stir until smooth, pour over warm cake & spread. Maybe 45-50 minutes. I know that the chocolate used for chips is often formulated to hold its shape when melted and cooled, as in cookies, so Im not sure if this glaze depends on some aspect of that formulation or not.

It was moist, fluffy, intensely chocolaty and delicious.

I was fretting when I read more comments (after it was in the oven) saying I should have used less baking soda, but thankfully all was well.
